So right before New Years my hubby asked me to make a coconut cream pie he had seen in a magazine, and (un)lucky for me he ripped out the page and brought it home so I could make it! I was completely willing to try since I have actually never made a pie before and I was excited to post about it on here. But once I began the recipe I had a feeling it wasn't going to turn out like the beautiful pie that was in the picture. Thankfully I was able to figure out how to save it, as you can tell from the picture above but unfortunately I was unable to save my beautiful homemade pie crust so I shamefully ran out to the store and bought a tender flake pie crust! But I figured I should post my failure turned success on here. So here it is!
Coconut cream pie
Ingredients
2 cups milk
3/4 cup cream
1/3 and 1/3 cup sugar
1 1/3 cup shredded coconut
2 eggs and 3 yolks
1/3 cup cornstarch
1/8 cup butter
1/8 cup vanilla
1 1/2 cup whipping cream
10" pie crust
4 ounces white chocolate
1 tbsp oil
Directions
Start by pouring the milk, cream, 1/3 cup of sugar and coconut into a pot. Bring it to a soft boil.
In a stand mixer bowl crack the eggs and add the two whole and three yolks. (I save the egg whites to make macaroons with but if you have no use to the whites and don't like eating just egg whites you can throw them out.)
Add in the other 1/3 cup of sugar and the cornstarch and beat until smooth.
Now this is where I think the recipe failed me, it says to temper the coconut mixture into the egg mixture so you don't end up with scrambled eggs. I am obviously not very good at tempering eggs and ended up with this,
This is supposed to be the nice thick filling that you normally see in a cream pie, but for me that was not the case but since it was my first pie I continued to follow the recipe not knowing what was going wrong. So the next two is to mix in the butter and vanilla. So go ahead and mix those in. Then it says to place the filling in the fridge and let cool. Once done you are supposed to put it in the pie pan. This is what it looked like,
not really looking like the thick coconut cream pie you expected huh? So here's my fix!
After I mixed everything together I threw it back into a pot and cooked it, immediately it started to thicken up on the stove so I continued heating it until I was satisfied with the texture! Once that was done I threw it in the fridge for a couple of hours.
While I waited for the filling to cool I threw the white chocolate into a double boiler with the oil and melted it.
When then filling was cooled I whipped up the whipping cream and folded it into it. It was now the perfect texture! So I pulled out my store bought pie shells (shame, shame) and filled the pies.
Once the chocolate had hardened I took it out and began scrapping chocolate curls off of it to put on top of the pies, and I was done!
I am not in any way a fan of coconut so I didn't even try the pies but my husband liked it and so did everyone that we were with on New Years Eve! But this is my lesson, don't ever trust recipes that my husband brings home for me, I should just stick to my own!
